Friday 6/18/10

Just a quicky cause I am going to bed!

Good week.  Lost a pound.  Ate some good food!

I made Cauliflower Mac & Cheese from the Food Revolution cookbook and it was easy and delicious!

Also, the date brownies get better ever time I eat them!  I have been spreading the recipe around. You know "my food propaganda"

Saturday is early morning walk with Alisa and then Killers with Jen. I need to catch up on a couple of episodes of Supernatural and check out what's on the DVR. Friday Night Lights for sure!

Monday 6/14/10

So had the day off but still got up to exercise with Alisa.  Go me! I then took a shower and did all my laundry all while rewatching some S1 Supernatural.  Join us at http://offcolortv.com/?p=1699 to discuss!

I also read more of my Healthiest Meals cookbook and proceeded to go to Central Market and spend WAY too much money to make crazy food.  Alis came over for dinner so it wasn't just for me.  I made: Wild Mushroom Crusted Sirloin Baby Spinach Salad with Fresh Raspberries and dessert?  Real Food Brownies.

Let's run this down.  Sirloin, OK.  It wasn't fabulous but it was pretty good and if I had remembered to get the green onions so we could have had the reduction sauce?  I bet it would be close to great!

Salad?  Delicious. Crisp and cool on a summer evening.  It was pretty good.  I used feta for the cheese and chopped the almonds myself.  The dressing of raspberry vinegar, Dijon, raspberry jam and agave was excellent and I will be using that recipe again for sure.

Now, the brownies.  Here's what they looked like:

dates
cacao powder (I used chips because I wanted creamier brownies)
macadamia nut oil
agave nectar
garbanzo beans (yes really!)
4 eggs
baking powder and cinnamon

Now that you are totally freaking out, let me tell you how it tasted.  Not bad actually!  Very chocolaty.  I served it with some fresh strawberries and whipped cream.  I don't know if I could actually sit down and eat the whole pan even if my heart was broken but for a light summer dessert?  Good.

Overall, this was an interesting meal and it left us both satisfied and not "full".  Alisa had just done boot camp so she needed to get in a good meal and this was it.

yeah I am a bad updater

So just in case you were wondering...I have lost 5 lbs and am on new thyroid meds so I actually HAVE metabolism again.  I am still eating well.  Lots of fruit and veggies and still cooking.

New stuff I have found in the past month that I like:

Soyatoo! Soy Whipped Topping.  It's totally delish!

thinkThin creamy peanut butter protein bars - 20g of protein and 230cal Gluten free Seriously? They taste pretty damn good.

I have also rediscovered my love of cottage cheese and fruit as a meal.  Great cool meal in the hot summer.

I caught up on all 4.5 seasons of Friday Night Lights in the last two weeks.  This is a great show if you have never watched.

Not much happening here

SI turned 46 last week.  It wasn't bad.  I had a Diet Coke and some pizza on the roof to celebrate.  A couple of dinners, a brunch and too much shopping.

I have not only become obsessed with cooking and food but also makeup,  Which is not so much new but, I don't know, just more obsessed.  So now I have to stop! Amanda sent me what I wanted from Smashbox plus tons more so I have way too much to play in.  I have a new 88 color eye shadow kit from Coastal Scents that I hear is fabulous.  I can't wait to play in it!  I have a couple days off.  A couple will be without makeup but Sunday had better watch out!

Now I am going to make me some dinner and watch Monday's Chuck.

Wednesday 4/21/10

Good day.  Not happy to be back at work buried under a mountain of paper but I left at 7:30 and it didn't look too bad.

Ate the food I brought.  Went for a long walk with Alisa around Uptown.  Stopped for some Red Mango frozen yogurt. If you have never been to Red Mango?  You need to go now!  It's delicious. I get the POM with black berries and raspberries.  We sit outside and watch the strange people and cute dogs walk by.

I cooked a sweet potato and spinach dish for dinner.  Lots of onions (for me at least) and spices and my apartment kinda stinks. It was good though.

Tuesday 4/20/10

Last day of my staycation.  Back to work tomorrow.  I need to figure out the food thing for work.  It's easy to eat good when I don't have to lug a bunch of crap around, you know?

I haven't had a Diet Coke since Saturday night.  It wasn't bad until this morning.  I got up at 6:30 to meet Alisa for my free Starbucks.  The coffee and an aspirin got rid of the nasty caffeine headache and i have been drinking water all day.

Also got my car worked on.  Ouch.  Another $200 and it should be done for the year.

Off to watch the Madonna episode of Glee.

Also, Ian Somerhalder is in the May GQ,   Take a peek.  He looks yummy.  Plus Jake Gyllenhaal is on the cover and there is a big article.

Saturday 4/17/10

Lovely spring rain coming down.  It meant for some fun at Central Market this evening with Alisa and her niece.  I love Central Market on Saturday night.  There are very few people there and the ones who are?  Weird.  Like the couple that was putting 1 new potato on the scale at a time, WTF?  Or the dude that kept yelling at his girlfriend/wife that he was going "over to the salmon" like it was calling him home or something.

So I spent too much money so I am going to have to eat all this stuff.  I had a yummy salad for dinner and I am going to make my own salad dressings tomorrow.  Cook chicken and this other sweet potato and spinach thing.

I have one Diet Coke left in the fridge.  I didn't' buy any more so my home supply is gone.  Hopefully, Lesley will have downed the stash in my work fridge by the time I get back on Wednesday.

Tomorrow is lunch with mom and dad.  I am going to try and get by Goodwill in the morning before I head over there and drop off stuff.  It's nice to have a couple of extra days off.  I am not feeling the pressure to do my laundry and get everything done by Monday.  I have my list and I'll get to it.

Setting Up House

So nobody is reading this yet but I am going to try and get started.

Here is what will happen.  Next week, I am joining Jamie Oliver's Food Revolution.  It's been awhile coming but an ugly birthday is coming up in a couple of weeks so it's time.

This is what is going to happen.  Before pictures (yuck) so I can actually SEE what's happening to me as I go though the process. That's the bad part.  The fun part will be food.  Pictures of food.  And probably shoes. And possibly some TV talk.  All my favorite things.

It has been years since I have blogged with any regularity.  Before Facebook. I used to do a little on My Space but really?  My Space?  Before that it was another place that nobody uses anymore in a dark, twisted time of my life.  It's all still there but I am not that person anymore.

So I have been reading Jaime's new cookbook and getting kind of excited.  I am going to be eating lots of salads and making my own soups and salad dressing.  And not drinking Diet Coke. Which make me sad.  But I will still have my coffee.  Because, hell no, I am not giving that up.This weekend, it's cleaning out my fridge and doing some grocery shopping.  Setting the stage.
